A Journey from Steward to Sous Chef

Chef Dwaine didn’t begin as a chef — he started as a kitchen steward, captivated by the transformation that happened in the kitchen each day. “I was fascinated by how chefs could take simple, everyday ingredients and turn them into something extraordinary,” he recalls.

Eager to learn, he spent his free time cross-training in the kitchen, honing his skills and deepening his knowledge. His dedication and curiosity led to his promotion to commis cook by Chef Creig Greenidge — the first step in what would become a stellar culinary career in Barbados.


Inspired by Family, Driven by Creativity

When asked what inspires him most, Chef Dwaine doesn’t hesitate: “My biggest influence is my son,” he says. “He has special needs and dietary restrictions, so I’ve had to get creative to make meals that are both healthy and enjoyable. That experience shaped how I think about food — it’s about care, inclusivity, and joy.”

That same philosophy influences his menus at The Rockley, where every guest, no matter their tastes or preferences, can find something that excites and satisfies.


Celebrating the Flavours of Barbados

Chef Dwaine describes his culinary style as modern Caribbean — bold, colourful, and rooted in local traditions. “I specialise in dishes that incorporate regional ingredients and traditional Bajan flavours,” he explains. “That’s where I feel most creative and most at home.”

When crafting menus, he focuses on diversity and appeal. “My personal preferences do play a role,” he admits, “but my goal is always to balance what I love with what I think guests will love.”

Passion, Versatility, and a Love of Learning

Though now a seasoned professional, Chef Dwaine still sees himself as a student of the culinary arts. “I love teaching and sharing what I’ve learned,” he says, “but I’m always learning new techniques, new ingredients, new ways to bring a dish to life.”

He especially enjoys the festive season, when Barbados bursts with flavour and celebration. “Christmas is one of my favourite times to showcase creativity in the kitchen,” he says with a smile.

His favourite ingredient? Protein. “It’s versatile and can be transformed in so many ways — it adds substance and power to every dish, whether sweet or savoury.”


Life Beyond the Kitchen

Outside of work, Chef Dwaine values balance. “Nothing makes me happier than spending time with my kids,” he shares. When not with family, he enjoys a good workout at the gym or a quiet evening at home.

As for comfort food, he stays true to his Caribbean roots — “a spicy Trini double is my go-to.” And when dining out, he recommends Pepenero at Limegrove Lifestyle Centre, though he admits to falling into the chef stereotype of not cooking at home, or when needs must, keeping it simple.

He believes there’s no such thing as an overhyped food trend. “Taste is personal,” he says, “so if it brings joy, it’s worth celebrating.”

Looking ahead, Chef Dwaine hopes to continue mentoring young chefs and sharing his passion for Caribbean cuisine. “Cooking allows me to teach and create at the same time — it’s the best of both worlds.”
